I use NetworkManager and systemd-resolved to manager my DNS, because I use dnscrypt-proxy. My "resolvectl" show my DNS settings are recognized and are applied to the Global section.

Code:
       LLMNR setting: yes
MulticastDNS setting: yes
  DNSOverTLS setting: no
      DNSSEC setting: allow-downgrade
    DNSSEC supported: yes
  Current DNS Server: ::1
         DNS Servers: ::1
                      127.0.0.1
Fallback DNS Servers: 1.1.1.1
                      8.8.8.8
                      1.0.0.1
                      8.8.4.4
                      2606:4700:4700::1111
                      2001:4860:4860::8888
                      2606:4700:4700::1001
                      2001:4860:4860::8844
          DNS Domain: ~.

However, individual IF, like the eth0, is still using my router as the DNS.

I have already configured NetworkManger to use "dns=none".

What am I missing?

A wild suggestion but have you tried without Network Manager running maybe it is interfering with the dns naming. Configuring networks of course will need to be manually done to test that, otherwise depending on how you feel about this maybe uninstalling and reinstalling Network Manager?
