I bought an Lenovo Thinkpad x200, and I don't currently have money for a better HDD/SDD so I have an old 120gb one
I'm currently on arch but I want to install Gentoo to learn more about the linux itself and how stuff works behind the curtains

I also have a core 2 duo processor, so how much time would it take to compile everything approximately

Complette rebuild, depending on your choice of packages, may be from 2 days to a week ;-)

A SSD is a must, I have old CPU's and the systems are "fast" with them.

omcho,

Welcome to Gentoo.

You can use Arch to install Gentoo, so there is no need to wait for your GEntoo install to complete.
At the end of that process, You will have both Arch and Gentoo installed and will choose at boot time which one to run.

Once you are happy with Gentoo, you can remove Arch and donate its HDD space to Gentoo.

You don't even need to install Gentoo in one go. Whatever you do will be there when you want to add to it.

One more thing. Compiling is like a stress test. Better be sure there is no dust in your CPU cooler, also the thermal paste between heatsink and CPU is known to deteriorate over time.
